Moong (or mung) dal is some of the most nutritious and easily digestible bean foodstuffs available. It is a staple in my pantry, as I make basic kitchari from split mung beans when I need a food break or just want something simple and very comforting.
This dal recipe is wonderful when served with rice (brown basmati is my favorite) or eaten with naan. Not to mention, dal and a salad make a perfect lunch or dinner. Adjust the seasonings to your taste.
