Blackberry Cobbler by Cupcakem on

Ok, so my Texas cousins, my father, and I were having a conversation about berries, and we ended up talking about blackberries… and then, by logic or magic or both, we ventured into blackberry cobbler conversation!  And thus… my search for an amazing recipe.  I add a little  vanilla and ginger to the berries (you may know by now that I like things heavy on seasonings).

Vegan Blackberry Cobbler

  • Total Time: 50 mins
  • Servings: 12


    • 3 1/2 cups unbleached flour
    • 5 teaspoons baking powder
    • 2 teaspoons salt
    • 2 tablespoons sugar
    • 1/2 cup vegan margarine
    • 1 1/2 cups soymilk
    • 6 cups blackberries
    • 1 tablespoon lemon juice
    • 3/4 cup sugar
    • 1 tablespoon cornstarch


  1. Mix first 4 ingredients in a bowl.
  2. Cut in margarine with pastry cutter until crumbly.
  3. Mix in milk until just mixed.
  4. Mix together berries and sugar in a 3 quart saucepan over low heat.
  5. Mix cornstarch with cold water and add to berries.
  6. Heat until bubbly.
  7. Pour berry mix into greased 9×13. Put buscuit mixture on top of that by spoonfuls. Should cover all the berry-mixture.
  8. Bake at 350 for 30 minutes or until golden brown.
